Also: I don’t really swim anymore. I’m having a mid-post moment of sadness about that. I should get back into the pool routine again, right? The water is seriously so cold sometimes that I would consider not going just to keep my body from freezing solid, but really, I should get back in. Swimming gave me the hungriest appetite ever, and these days with my *literal* job being making food and eating? Yes and yes. We need to make these two things work together.

Pretty sure I once wore a t-shirt that said swimming is life, the rest is just details. Anyone? Ironically this is still true for me still except it’s about food. What Makes These Protein Pancakes Healthy

No refined sugar, high in protein! Wahoooo. Listen to this:

  • No refined sugar because banana’s got your back.
  • No refined grains with a special s/o to oats on that one.
  • Lots and lots and lots of protein – from protein powder if you want (I use this collagen protein) and/or protein just from the eggs and egg whites.

How To Make Protein Pancakes

I love an easy blender recipe. And that’s exactly what this recipe is.

Here’s what you’re going to do:

  1. Put all your ingredients in a blender. Bananas, oats, eggs, protein powder, cinnamon, etc.
  2. Blend it all up. We want this smooth!
  3. Pour into pancakes on a griddle and cook until golden brown.
  4. Serve ’em up and eat!

Toppings For Protein Pancakes

And if you stopped there, you’d have yourself a pretty epically healthy protein pancake breakfast. You’d probably be the kind of intentional #fitspo person to top it with fruit, yogurt (strange but I love it as a healthy topping because it helps pancakes get that soaked-syrup-texture without all the sugar), and granola for crunch. GO YOU! We’re proud.

Of course, if you didn’t stop there, you would be my protein pancakes soul sister and you would sit with me and eat the dessert version of protein pancakes while cheering on the sisters from scenario number one. There just is no other way for me.

Can I prepare the batter ahead of time?

Yes! I kept the batter in individually portioned jars* for an easy ready-made breakfast.

I made extra pancakes. How should I store them?

Yum! Good idea! You can refrigerate or freeze cooked pancakes.

What kind of pan do you recommend?

Any nonstick pan or nonstick griddle will work here. We loved the Lodge cast iron griddle* for this job. The griddle is also great for other things like french toast, grilled cheese parties, and more.

What protein powder do you recommend for these pancakes?

I love the Vital Proteins Collagen Protein* because it’s flavorless, super smooth, and packed with protein. Highly recommend!

Description

The Best Protein Pancakes! These are super easy with no refined grains or refined sugar. Just oats, banana, and eggs!


Ingredients

Units Scale
  • 1 cup oats
  • 1 banana
  • 2 eggs
  • 1/2 cup egg whites
  • 1 teaspoon baking powder
  • a pinch of salt
  • a pinch of cinnamon
  • 12 scoops protein powder (about 1/4 cup, or 29 grams)
  • 2 tablespoons flax meal

Instructions

  1. Run everything through the blender on medium low speed until very well mixed.
  2. Heat a nonstick griddle to medium high heat. Add batter in small circles – about 1/4 cup per pancake. Sprinkle with blueberries or chocolate chips if you want. When the edges start to look dry (2-3 minutes), flip and cook another minute or two on the other side.
  3. Top with anything you like! I like syrup and peanut butter and chocolate chips.

Update 7/12/22: Based on reader feedback and additional testing, we’ve reduced the amount of baking powder to 1 teaspoon (previously 4 teaspoons).

If the pancakes are falling apart, you may need to turn the heat up. We consistently get pancakes that hold and flip when the heat is at a high enough level and when we use a nonstick pan. You can also add more or less flax to get the consistency just right for you!

    This is a lot of cholesterol especially if you have or are borderline high, still work out and want a high protein breakfast or snack.

    Looks great but not good for those with cholesterol issues.

    I was a little nervous about these based on the top comments but they turned out great!

    Some modifications I made: only did the 2 eggs. Added a splash of milk to make up the lack of liquid from that missing egg white. And I added a scant tbsp of brown sugar.

    Just made these (with a couple modifications because of ingredients I had on hand) and they were great! I didn’t have any eggs in my house, so I substitutes “flax seed eggs” for the regular eggs and omitted the egg whites entirely. They came out reminiscent of baked oatmeal, which I wasn’t angry about. After making half of the batter I decided to add milk in place of the egg whites, and it made the texture more like a tradition pancake. Both were great! I’ll get eggs when I go to the store so I can try the recipe as intended, but I just wanted to share for anyone who may be in the same boat as me… Eggless but wanting to try this recipe 🙂

    These were so good! Followed the recipe exactly. I had no troubles flipping them. Glad to have another high protein breakfast that’s not just eggs. I used Ascent Protein powder. And we did eat them with peanut butter, a little maple syrup, and some mini chocolate chips. Yum!!

    I made these this morning and they turned out great. I added a caramel flavored protein powder which gave it great flavor. Then spread a small amount of peanut butter on each pancake and some maple syrup. I froze the leftovers for a quick breakfast.. Will make again!

    This is probably the first protein pancake I’ve ever found that not only fluffed up extremely similar to a regular pancake, but also tastes good! I really wasn’t expecting much, but was super happy with these. Made them exactly as written, using Huel Vanilla protein powder, and by my rough estimate, these came to about 5g of protein per pancake (I got 10 using 1/4c each). I’ll be printing and keeping this one. THANK YOU!

    I love these pancakes! I have made them twice now. In my second round, I didn’t have any egg whites so used almond milk instead. The batter was a bit thinner as expected but the pancakes still cooked up nicely and were just as delicious! These are such a great way to get more protein in. Thanks!

    I made these with everything except the egg whites. I had maybe enough batter for 2.5 pancakes the size of my palm. So, to future readers, do be aware that these are more like silver dollar pancakes than you might expect or want.

    Great pancakes! Smooth texture and nicely fluffy! I added a little Greek yogurt and a pinch of sugar for one pancake and they were just like boxed mixes. I love the healthiness and tastiness! Great recipe!

    Oooo these were gooood! I might have overcooked mine by mistake (decided to be efficient and wash the blender and ignored the timer for a bit) so they were a tad dense, but nothing some extra syrup and a dollop of yogurt didn’t fix.

    These are a keeper, so easy to whip up even on a weekday! Served with peanut butter, some syrup, and some skyr yogurt for an added blob of protein,

    Best pancakes I’ve ever made! They are so moist and delicious and the best part is that they’re very healthy for when you are craving pancakes.

    Unfortunately, these turned out terribly. I typically refrain from posting negative comments but felt the need to write something because of the sheer amount of ingredients and money I wasted on this recipe in high-quality eggs, organic oats, grass-fed butter, and one of the more expensive whey proteins.

    Followed the recipe to a T (as a seasoned baker/cook) and the pancakes burned almost immediately, even on lower heat AND with butter added to the pan. Texture was mealy and dry (predictable with oats) and they were tasteless except for the banana taking the stage and lingering (also, I should have known this).

    It did look great! I appreciate the healthy mods. All the best.

    This recipe was fun to try. They’re certainly different and not like a regular pancake, so don’t go into it thinking that. I added a little applesauce, sourdough discard, and a few dark chocolate chips. I then used various toppings to see what we liked best. My daughters and I enjoyed these pancakes.

    Absolutely disgusting. I should d’ e realized this was a terrible recipe when I saw there was no liquids in the list.
    Came out dry little hockey pucks with no flavour. Couldn’t even salvage them with peanut butter and jam.
    Terrible waste of food.

    These were delicious! I have a young toddler who I am always trying to come up with cleaner/healthier alternatives for. I have been using protein Kodiak cakes from the box for convenience but there is SO much garbage in them. I didn’t have protein powder on hand so I added a tablespoon of peanut butter and these turned out great. I will 100% be making these again. They are just as easy as stuff from the box but way cleaner AND yummy! I topped these with strawberries and maple syrup!
